Zucchini Cookies
Ingredients
- 3/4 cup shortening
- 1/2 cup sugar
- 1/2 cup brown sugar
- 1 1/2 cup zucchini, peeled, seeded, and shredded
- 1 egg
- 2 teaspoon vanilla
- 2 1/2 cup flour
- 1/2 teaspoon salt
- 1 teaspoon soda
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1 cup chocolate chips
Directions
Preheat oven to 350°F.
Cream together the shortening and sugars. Beat in egg and vanilla. Sift together dry ingredients and slowly beat in to the batter. Stir in chocolate chips. Set in the refrigerator for 30 minutes. Drop by tablespoonfuls on a cookie sheet and bake 15 minutes, or until lightly brown.
